Salmon Lettuce Wraps with Lemon Glaze

1 lb fresh salmon fillets, skin on

1 tbsp olive oil

Salt and pepper to taste

1/4 cup honey

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

1 tbsp soy sauce

1 tsp minced garlic

1 tsp minced ginger

1 tbsp fresh dill, chopped (optional)

1 head of butter or romaine lettuce, leaves separated

1 avocado, sliced

1/2 cup shredded carrots

1/2 cup cucumber, thinly sliced

Sesame seeds for garnish

Prepare the Salmon: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper and place the salmon fillets on it, skin side down. Drizzle the fillets with olive oil, then season generously with salt and pepper.

    Make the Lemon Glaze: In a small saucepan, combine the honey, fresh lemon juice, lemon zest, soy sauce, minced garlic, and minced ginger over medium heat. Stir the mixture frequently and bring it to a gentle simmer. Allow it to cook for 5-7 minutes, or until the glaze has thickened slightly. Once done, remove it from heat and let it cool slightly.

      Bake the Salmon: Pour half of the prepared lemon glaze over the salmon fillets, and set the remaining glaze aside for later use. Place the salmon in the preheated oven and bake for 12-15 minutes, or until the fish flakes easily with a fork.

        Flake the Salmon: After baking, carefully remove the salmon from the oven and let it cool for a minute or two. With a fork, gently flake the salmon into bite-sized pieces, making sure to keep the skin intact for easy cleanup.
