1 pound Italian sausage (choose mild for a gentle flavor or spicy for a kick)

1 red bell pepper, diced

1 medium onion, finely chopped

2 cloves garlic, minced

¼ teaspoon cayenne pepper (optional, for added heat)

Salt and freshly cracked black pepper, to taste

4 large eggs

2 tablespoons extra virgin olive oil

Fresh parsley, chopped (for a vibrant garnish)

Cook the Sausage: In a large, heavy-bottomed skillet over medium heat, add the Italian sausage. Use a spatula to break the sausage into smaller pieces as it cooks. Sauté until it's nicely browned and fully cooked, about 5-7 minutes. Once done, transfer the sausage to a plate using a slotted spoon, leaving the flavorful drippings in the pan.

    Sauté the Vegetables: In the same skillet, add 2 tablespoons of olive oil. When the oil shimmers, add the diced sweet potatoes. Cook for approximately 10 minutes, stirring occasionally, until the sweet potatoes begin to soften and brown around the edges.

      Add Aromatics: To the softened sweet potatoes, stir in the chopped onion and diced red bell pepper. Continue cooking for another 5-7 minutes, stirring frequently until the onions become translucent and the peppers are tender. Add the minced garlic, smoked paprika, and cayenne pepper (if desired). Season generously with salt and freshly cracked pepper, then stir everything to combine well.
