Sautéed Garlic Mushroom & White Bean Tostadas

1 can (15 oz) white beans (cannellini or great northern), rinsed and drained

8 oz cremini or button mushrooms, sliced

4 cloves garlic, minced

1 medium onion, diced

2 tablespoons olive oil, divided

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

8 corn tostadas

1 cup shredded lettuce

1 ripe avocado, sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Prepare the Beans: In a medium bowl, use a fork or potato masher to mash the white beans slightly, leaving some whole for added texture. Season with a pinch of salt and pepper, mixing well. Set aside.

    Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Incorporate the sliced mushrooms and continue to cook for another 5 minutes until they are golden brown and tender.

      Add Garlic and Spices: Stir in the minced garlic, smoked paprika, and ground cumin. Sauté for an additional 1-2 minutes until the garlic becomes fragrant. Taste and season with salt and pepper as desired.

        Combine with Beans: Add the reserved mashed and whole white beans into the skillet with the mushroom mixture, gently stirring to combine everything. Cook for an additional 3-5 minutes, allowing the ingredients to heat through and the flavors to blend beautifully.
