Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 cup unsalted butter, cold and cut into small cubes

1 cup sharp cheddar cheese, shredded

1 cup cooked bacon, crumbled

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

Combine Dry Ingredients: In a large mixing bowl, add the all-purpose flour, baking powder, baking soda, salt, and ground black pepper. Use a whisk to mix thoroughly, ensuring all ingredients are well combined.

Cut in the Butter: Add the cold, cubed unsalted butter to the bowl. Using a pastry cutter, a fork, or your fingertips, blend the butter into the flour mixture until it resembles coarse crumbs. Aim to have some pea-sized pieces of butter remaining for a flaky texture.

Incorporate Cheese and Bacon: Gently fold in the shredded cheddar cheese and crumbled bacon, ensuring they are evenly distributed throughout the dough.

Mix Wet Ingredients: Make a well in the center of the dry mixture and pour in the buttermilk. Stir gently with a spatula or wooden spoon until the mixture is just combined—take care not to overmix, as this can result in tough biscuits.

Shape the Biscuits: Turn the dough onto a lightly floured surface. Knead it gently just a couple of times until it forms a cohesive dough. Pat or roll the dough into a rectangle about 1-inch thick. Use a biscuit cutter or a sharp knife to cut out biscuits approximately 2-3 inches in diameter.

Bake: Place the cut biscuits on the prepared baking sheet, positioning them close together for softer sides. Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown and the biscuits have risen.

Cool and Serve: After baking, remove the biscuits from the oven and let them cool on the baking sheet for a few minutes. If desired, garnish with chopped fresh chives for a pop of color and flavor. Serve warm, ideally with a dollop of butter for an added indulgence.
