2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

8 large flour tortillas

2 tablespoons olive oil (for frying)

Instructions
 

Cook the Beef Filling:

    - In a large skillet set over medium heat, add the ground beef. Use a wooden spoon to break it apart as it cooks, browning it evenly until fully cooked, approximately 5-7 minutes.

      - Incorporate the diced onion and minced garlic into the skillet. Sauté the mixture until the onion becomes translucent, stirring occasionally for about 3-4 minutes.

        - Add the diced bell peppers, cumin, smoked paprika, chili powder, and season with salt and black pepper. Continue to cook until the bell peppers are tender, around 5 minutes. Remove from heat and set the filling aside.

          Assemble the Quesadillas:

            - On a clean kitchen surface, lay one tortilla flat. Generously sprinkle about ½ cup of shredded cheese over one half of the tortilla.
