Ingredients

1 lb ground beef (80/20 for optimal flavor and juiciness)

2 medium sweet potatoes, peeled and cut into small, even cubes

1 medium onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp smoked paprika

1 tsp ground cumin

1 tsp dried oregano

Salt and freshly ground black pepper, to taste

2 tbsp olive oil, divided

1 tbsp Worcestershire sauce

4 large eggs (optional, for serving)

Fresh parsley or cilantro, chopped, for garnish

Instructions

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, carefully add the diced sweet potatoes, making sure to spread them evenly. Season the potatoes generously with salt and freshly ground black pepper. Sauté for approximately 10 minutes, stirring occasionally until the sweet potatoes are tender and exhibit a golden, slightly caramelized exterior. Once done, remove them from the skillet and set aside.

Cook the Beef: Without cleaning the skillet, add the remaining tablespoon of olive oil. Heat it over medium-high heat until shimmering. Introduce the ground beef, breaking it apart with a wooden spoon or spatula. Cook for about 5-7 minutes, stirring frequently until the beef is beautifully browned. If there’s excess fat, carefully drain it off.

Add the Vegetables: Incorporate the diced onion and both bell peppers into the skillet with the browned beef. Stir well to combine. Sauté for another 5 minutes or until the onions turn translucent and the peppers soften.

Seasoning the Mixture: Once the vegetables are softened, stir in the minced garlic, smoked paprika, ground cumin, dried oregano, and Worcestershire sauce. Allow them to cook for an additional 2 minutes, stirring continuously, allowing the delicious aromas to blend and intensify.

Combine Everything: Return the sautéed sweet potatoes to the skillet with the beef and pepper mixture. Toss the ingredients gently until they are well combined. Taste and adjust seasoning with additional salt and pepper if needed. Allow the mixture to heat through for about 3-4 minutes, so all flavors meld beautifully.

Optional Egg Topping: If desired, prepare fried eggs as a topping. In a separate non-stick skillet, heat over medium heat and lightly grease it with cooking spray or a bit of oil. Crack the eggs into the skillet and fry them to your preferred doneness (sunny side up, over-easy, or fully cooked).

Serve: To serve, place generous portions of the hearty beef and sweet potato hash onto individual plates. If using, gently top each serving with a fried egg. Finish by garnishing with freshly chopped parsley or cilantro for a vibrant touch of color and freshness.
