Ingredients

For the Black Beans:

1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Sea salt and freshly ground black pepper, to taste

Juice of 1 fresh lime

For the Rice:

1 cup brown rice (or substitute with white rice)

2 cups vegetable broth (or water)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt, to taste

Toppings and Extras:

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup corn (canned, frozen, or fresh)

1/2 cup fresh cilantro, roughly chopped

1 cup shredded cheese (cheddar or a Mexican blend)

Lime wedges for serving

Hot sauce (optional, for a spicy kick)

Instructions

Cook the Rice:

    - In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the brown rice and toast it by stirring for about 2 minutes until it has a nutty aroma.

      - Pour in the vegetable broth and sprinkle in a pinch of salt. Bring the mixture to a rapid boil. Then reduce the heat to low, cover, and let it simmer for approximately 45 minutes for brown rice, or 20 minutes for white rice. Once the liquid is fully absorbed and the rice is tender, remove it from heat and fluff with a fork.

        Prepare the Black Beans:

          - While the rice is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until it's soft and translucent. Then, add the minced garlic and continue to stir for about 30 seconds until fragrant.

            - Incorporate the drained black beans, cumin, smoked paprika, salt, and pepper into the skillet. Cook for an additional 5-7 minutes to warm the beans through and ensure they're infused with the spices. Finish by squeezing fresh lime juice over the mixture and stir well to combine.

              Prepare the Toppings:

                - While the rice and beans are cooking, take a moment to prepare your toppings. Dice the avocado, halve the cherry tomatoes, and chop the fresh cilantro. If using corn, heat it gently in a pan or microwave if needed.

                  Assemble the Burrito Bowls:

                    - In serving bowls, start by adding a generous layer of fluffy rice as the base. Next, spoon on the seasoned black beans. Top everything with the diced avocado, halved cherry tomatoes, corn, and a generous sprinkle of shredded cheese. For a fresh touch, garnish with chopped cilantro.

                      Serve:

                        - Present the burrito bowls with lime wedges on the side and offer hot sauce for those who desire an extra spicy burst. Enjoy your deliciously Savory Black Bean and Rice Burrito Bowls!
