Ingredients

1 pound boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 medium red bell pepper, sliced

1 medium yellow bell pepper, sliced

1 cup snap peas, trimmed

1 cup broccoli florets

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

1 teaspoon honey

Juice of 1 lemon

Salt and pepper to taste

2 green onions, sliced (for garnish)

Cooked jasmine or brown rice (for serving)

Instructions

Marinate the Chicken: In a mixing bowl, combine the sliced chicken breast with soy sauce, oyster sauce, and cornstarch. Stir well until the chicken is evenly coated. Cover and let it marinate for a minimum of 15 minutes, allowing the meat to soak up the flavorful ingredients.

Prepare the Sauce: In a small bowl, whisk together the sesame oil, honey, lemon juice, and a pinch of salt and pepper until well combined. This zesty sauce will bring all the flavors together.

Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Cook for about 5-6 minutes, stirring occasionally, until the chicken turns golden brown and is fully cooked through. Once done, transfer the chicken to a plate and set aside.

Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger for about 30 seconds, or until fragrant. Next, toss in the sliced red and yellow bell peppers, snap peas, and broccoli florets. Stir-fry the vegetables for about 4-5 minutes until they are bright in color and tender-crisp.

Combine Everything: Return the golden chicken to the skillet with the stir-fried vegetables. Pour the prepared zesty sauce over the chicken and veggies. Toss everything together until evenly coated, then cook for an additional 2 minutes, ensuring everything is heated through and combined.

Finish and Serve: Taste the stir-fry and adjust seasoning with more salt and pepper if needed. Garnish with sliced green onions for a fresh touch. Serve the stir-fry hot over a bed of fluffy jasmine or brown rice for a satisfying and wholesome meal.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

Presentation Tips: For an eye-catching presentation, serve the stir-fry in a large bowl or on a platter, and sprinkle a few extra green onion slices and lemon wedges on the side for an inviting look.
