1 pound Italian sausage (mild or spicy depending on preference)

2 cups kale leaves, chopped and stems removed

1 small onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

Kosher salt and freshly ground pepper to taste

1 egg, beaten (for egg wash)

Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, salt, and granulated sugar. Add the chilled butter cubes and, using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs, with some larger pieces of butter remaining. Gradually incorporate ice-cold water, one tablespoon at a time, mixing until the dough starts to come together without being sticky.
