1 lb Italian sausage (choose mild or spicy based on your preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes, with their juices

4 cups low-sodium chicken broth

2 cans (15 oz each) white beans (either cannellini or navy), drained and rinsed

1 tsp dried thyme

1 tsp dried oregano

1 bay leaf

Salt and freshly ground black pepper to taste

2 cups fresh kale or spinach, roughly chopped

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Once the oil is shimmering, add the Italian sausage. Cook, breaking it apart with a spoon, until it is nicely browned and cooked through, approximately 5-7 minutes. After browning, use a slotted spoon to remove the sausage from the pot and set it aside. Leave a bit of the rendered fat in the pot for the next step.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté the mixture for about 5 minutes, stirring occasionally, until the vegetables begin to soften and the onion becomes translucent. Add in the minced garlic and continue to cook for another minute, until the garlic is fragrant but not browned.

      Add Tomatoes and Broth: Pour in the can of diced tomatoes along with their juices, the chicken broth, the drained white beans, dried thyme, dried oregano, and the bay leaf. Return the browned sausage to the pot, stirring to combine all the ingredients.

        Simmer the Soup: Increase the heat, bringing the soup to a boil. Once boiling, reduce the heat to low and allow it to simmer uncovered for 20-25 minutes. This simmering process will help to meld the flavors together beautifully. Stir occasionally to prevent sticking.
