1 lb fresh shrimp, peeled and deveined

2 ripe avocados, diced into bite-sized pieces

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons freshly squeezed lime juice

1 tablespoon extra-virgin olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper to taste

4 large whole wheat tortillas

Optional: hot sauce for an extra kick

Instructions
 

Cook the Shrimp:

    - In a medium skillet, warm the olive oil over medium heat. Once the oil is shimmering, add the peeled and deveined shrimp into the skillet. Season them generously with ground cumin, smoked paprika, salt, and black pepper.

      - Sauté the shrimp for approximately 3-4 minutes, stirring occasionally, until they transform to a pink and opaque color. Once cooked, remove the skillet from heat and let the shrimp cool slightly in a bowl.

        Prepare the Salad Mixture:

          - In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, finely chopped red onion, and fresh cilantro.

            - Drizzle the lime juice over the ingredients and gently toss with a fork or spatula, making sure to keep the avocado pieces intact to avoid mashing.

              Combine the Shrimp:
