20 large pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg, beaten

2 cloves garlic, minced

1/2 medium onion, finely chopped

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta Shells:

    - Fill a large pot with water, add a generous amount of salt, and bring to a rolling boil. Carefully add the pasta shells and cook them according to the package directions until they are al dente. Once cooked, drain them in a colander and set aside to cool.

      Prepare the Filling:

        - Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Next, incorporate the minced garlic and continue to cook for an additional minute until it becomes fragrant.

          - Add the ground turkey to the skillet, breaking it apart with a wooden spoon as it cooks. Cook until the turkey is browned and fully cooked through, which should take about 5-7 minutes. Season the turkey with salt, pepper, and Italian seasoning for enhanced flavor.

            - Once the turkey is cooked, stir in the chopped spinach and allow it to wilt, which will take about 2 minutes.

              - In a mixing bowl, combine the turkey mixture with ricotta cheese, half of the shredded mozzarella cheese, grated Parmesan cheese, and the beaten egg. Stir everything together until the mixture is evenly combined.

                Stuff the Shells:

                  - Preheat your oven to 375°F (190°C).

                    - Spread 1 cup of marinara sauce evenly across the bottom of a large baking dish to create a base layer.

                      - Carefully fill each cooked pasta shell with the turkey and spinach mixture using a spoon and place them in the baking dish with the seams facing up.

                        - After all shells are filled, pour the remaining marinara sauce over the top and sprinkle the remaining mozzarella cheese evenly on top for a cheesy finish.

                          Bake:

                            - Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden.

                              Garnish and Serve:

                                - Once baked, remove the dish from the oven and allow it to cool for a few minutes. If desired, garnish with fresh basil leaves for a burst of color and flavor before serving.
