Ingredients

1 lb (450g) ground turkey

2 cups broccoli florets

1 medium red bell pepper, sliced into thin strips

1 medium carrot, peeled and julienned

1 cup snap peas, trimmed and cleaned

3 cloves garlic, minced

1-inch piece of ginger, finely grated

3 tablespoons low-sodium soy sauce

1 tablespoon hoisin sauce

2 teaspoons sesame oil

1 tablespoon vegetable oil

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

Salt and pepper to taste

Cooked brown rice or quinoa, for serving

Sesame seeds and chopped green onions, for garnish

Instructions

Prepare the Sauce: In a small mixing bowl, combine the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Whisk until well blended and set aside to allow the flavors to meld.

Cook the Turkey: Heat the vegetable oil in a large skillet or wok over medium-high heat. When the oil is shimmering, add the ground turkey. Season with a pinch of salt and freshly cracked pepper. Cook for approximately 5-7 minutes, using a spatula to break the meat apart, until it is thoroughly browned and no longer pink in the center.

Add Vegetables: Once the turkey is cooked, stir in the minced garlic and grated ginger. Cook for about 1 minute, allowing the spices to release their aroma. Next, add the broccoli florets, sliced red bell pepper, julienned carrot, and snap peas. Stir-fry the vegetables alongside the turkey for 5-6 minutes, or until they are tender yet retain their vibrant color and crunch.

Thicken the Sauce: Pour in the prepared sauce, ensuring all the ingredients are evenly covered. Bring the mixture to a gentle simmer. Gradually stir in the cornstarch mixture, mixing well to prevent lumps. Allow the stir-fry to cook for an additional 2-3 minutes, or until the sauce thickens and glazes the turkey and vegetables beautifully.

Serve: Taste the dish and adjust the seasoning if needed, by adding more salt or pepper. Serve the savory stir-fry over a generous portion of cooked brown rice or quinoa, making sure to scoop up plenty of the sauce.

Garnish and Enjoy: Sprinkle sesame seeds and finely chopped green onions over the top for added flair and flavor. Dive into your delicious and nutritious Savory Turkey and Vegetable Stir-Fry Bowl!
