Ingredients

2 cups fresh blueberries, plus extra for garnish

2 tablespoons granulated sugar (divided)

1 tablespoon freshly squeezed lemon juice

Zest of 1 lemon

1 cup heavy cream

1/2 cup mascarpone cheese or Greek yogurt

1 teaspoon pure vanilla extract

A pinch of sea salt

Instructions

Prepare the Blueberry Sauce: In a medium saucepan set over medium heat, combine the fresh blueberries, 1 tablespoon of granulated sugar, the lemon juice, and half of the lemon zest. Stir gently and cook for approximately 5-7 minutes, or until the blueberries have softened and burst, creating a thick sauce. Once done, remove the saucepan from the heat and let the blueberry sauce cool completely at room temperature.

Whip the Cream: In a large mixing bowl, pour in the heavy cream, the remaining tablespoon of sugar, pure vanilla extract, and a pinch of sea salt. Using an electric mixer, whip the mixture on medium-high speed until soft peaks begin to form. Be cautious not to over-whip, as it can turn grainy.

Incorporate the Mascarpone: In a separate bowl, whisk the mascarpone cheese (or Greek yogurt) until it is smooth and creamy. Carefully fold the whipped cream into the mascarpone in two or three additions, using a spatula. Take your time to ensure the mixture remains airy and light.

Layer the Fool: In individual serving glasses or bowls, spoon in a layer of the blueberry sauce at the bottom. Next, add a layer of the creamy whipped mascarpone mixture on top. Repeat the layering process until all ingredients are used, finishing with a generous dollop of the blueberry sauce on the very top.

Garnish & Chill: To finish, garnish each glass with a few fresh blueberries and a light sprinkle of the remaining lemon zest. Cover each serving with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld together beautifully.

Serve: When ready to serve, remove the glasses from the refrigerator and enjoy chilled. Relish the delightful contrast of the sweet-tart blueberries against the light and creamy lemon mascarpone mixture!
