Simple Fig Jam Quesadillas

Ingredients
  

1 cup fig jam (store-bought or homemade)

4 large flour tortillas

1 cup shredded mozzarella cheese (or brie for a creamier texture)

½ cup goat cheese, crumbled

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (optional)

Fresh arugula or basil leaves for garnish (optional)

Prepare Your Ingredients: Gather all the ingredients at your workstation. If you'd like to use fresh thyme, strip the leaves from the stems and set them aside.

    Spread the Fig Jam: Lay one tortilla flat on a clean surface. Using a spatula or the back of a spoon, spread about ¼ cup of fig jam evenly over half of the tortilla.

      Add the Cheeses: Sprinkle ¼ cup of shredded mozzarella cheese and 2 tablespoons of crumbled goat cheese on top of the fig jam. If you're using thyme, add a few leaves now to enhance the flavor profile.

        Fold the Tortilla: Carefully fold the tortilla in half over the filling. Gently press down to secure the edges and hold the filling in place.

          Heat the Pan: In a large skillet, melt 1 tablespoon of unsalted butter over medium heat. Allow it to heat until it melts and begins to foam slightly, signaling that it's ready for cooking.

            Cook Until Golden: Place the folded tortilla in the skillet and cook for approximately 3-4 minutes. Keep an eye on it until the bottom is a beautiful golden brown and the cheese starts to melt.

              Flip and Repeat: With a spatula, carefully flip the quesadilla over. Add the remaining tablespoon of butter to the skillet. Cook the second side for another 3-4 minutes or until it’s golden and crispy.

                Slice and Serve: Once both sides are perfectly golden and the cheese is fully melted, remove the quesadilla from the skillet. Let it cool for about a minute before slicing it into wedges.

                  Garnish and Enjoy: If desired, garnish the top with fresh arugula or basil leaves for a pop of color and freshness. For a delightful twist, drizzle with honey or serve with a dollop of Greek yogurt alongside your quesadilla.
