2 medium zucchinis, grated

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

4 small whole wheat flour tortillas

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon garlic powder

1/4 cup chopped fresh cilantro (optional, for garnish)

Salsa or sour cream, for serving

Prepare the Zucchini: Begin by grating the zucchinis using a box grater or a food processor. Transfer the grated zucchini to a clean kitchen towel and twist the towel to squeeze out as much moisture as possible, ensuring your quesadillas don’t get soggy.

    Mix the Filling: In a large mixing bowl, combine the drained zucchini, shredded cheese, ground cumin, garlic powder, salt, and pepper. Stir well with a spoon or spatula until all ingredients are thoroughly mixed and evenly distributed throughout the mixture.

      Preheat the Pan: Heat a large skillet over medium heat. Once hot, add half of the olive oil and let it warm for a few seconds to ensure an even cooking surface.

        Assemble the Quesadillas: Place one tortilla in the preheated skillet. On one half of the tortilla, spread a generous layer of the zucchini and cheese mixture. Carefully fold the other half of the tortilla over to cover the filling, creating a half-moon shape.

          Cook the Quesadillas: Cook the quesadilla for about 3-4 minutes, or until the bottom side is golden brown and crispy. Using a spatula, gently flip the quesadilla and cook for an additional 3-4 minutes on the other side, until that side is also golden and the cheese has melted.
