4 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest of 1 medium lemon

Juice from 2 medium lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon fresh rosemary, finely chopped (or 1/3 teaspoon dried rosemary)

1 cup low-sodium chicken broth

2 tablespoons unsalted butter

Fresh parsley, finely chopped (for garnish)

Thin lemon slices (for garnish)

Prepare the Chicken: Start by patting the chicken breasts dry with paper towels. This step is crucial for achieving a nice sear. Once dried, season both sides generously with salt and freshly ground black pepper.

    Sear the Chicken: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat. When the oil is shimmering, carefully place the chicken breasts in a single layer. Cook for approximately 5-7 minutes on each side, or until they are golden brown and the internal temperature reaches 165°F (74°C). Once cooked through, remove the chicken from the skillet and set it aside, keeping it warm.
