1 lb (450g) spicy Italian sausage, casings removed

1 lb (450g) red potatoes, diced into 1-inch cubes

1 medium onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp dried oregano

Salt and pepper, to taste

2 tbsp olive oil

4 large eggs (optional)

Fresh parsley, chopped for garnish

Boil the Potatoes: Start by placing the diced red potatoes in a medium-sized pot. Fill the pot with enough water to cover the potatoes. Bring the water to a boil over high heat and cook the potatoes for about 10 minutes, or until they are just tender but not falling apart. Once done, drain the potatoes and set them aside.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spicy Italian sausage and use a wooden spoon to break it up into smaller pieces. Cook for about 5-7 minutes until the sausage is nicely browned and cooked through. Once ready, remove the sausage from the skillet and set it aside in a bowl.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Then, add the finely chopped onions, diced red bell pepper, and minced garlic. Sauté the vegetables for about 4-5 minutes, stirring occasionally, until the onions turn translucent and fragrant.
