1 lb beef chuck, cut into 1-inch cubes

1 cup pearl barley, rinsed

4 cups beef broth (low sodium preferred)

2 cups water

1 cup carrots, diced (fresh or frozen)

1 cup celery, diced

1 cup onion, diced (preferably yellow or white)

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper, to taste

2 tbsp olive oil (for browning)

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, incorporate the beef cubes and season them with salt and pepper to taste. Sear the beef for about 5-7 minutes, turning occasionally until evenly browned on all sides. This browning step is crucial as it enhances the flavor profile of your soup.

    Combine Ingredients: In your slow cooker, layer in the browned beef. Add the rinsed barley, diced carrots, diced celery, diced onion, minced garlic, and the can of diced tomatoes (including the juices).
