2 pounds beef chuck roast

4 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 cup beef broth (or replacement for dry white wine)

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

12 ounces egg noodles

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Prepare the Onions: Begin by heating a tablespoon of oil in a large skillet over medium heat. Add the thinly sliced onions and sauté them until they become soft and golden brown, about 20 to 25 minutes. Be sure to stir frequently to avoid burning. Once caramelized, transfer the onions to the slow cooker.

    Sear the Beef: Generously season the beef chuck roast with salt and pepper. In the same skillet, add another small drizzle of oil and sear the roast on all sides until a deep brown crust forms, approximately 4 to 5 minutes per side. Once browned, place the beef on top of the caramelized onions in the slow cooker.

      Combine the Broth Mixture: In a mixing bowl, whisk together the beef broth, Worcestershire sauce, minced garlic, dried thyme, and dried rosemary. If not using wine, you can add an additional cup of beef broth for depth. Carefully pour this fragrant mixture over the beef and onions in the slow cooker.
