1 can (15 oz) chickpeas, thoroughly rinsed and drained

2 tablespoons olive oil

2 tablespoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (feel free to adjust for spice preference)

½ cup BBQ sauce (choose your favorite brand)

4 large whole wheat tortillas or wraps

2 cups finely shredded green cabbage

1 cup finely shredded carrots

½ cup mayonnaise or vegan mayo

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup (for a vegan alternative)

Salt and freshly ground black pepper to taste

Fresh cilantro or parsley, chopped, for garnish (optional)

Prepare the Chickpeas: In a large skillet, warm the olive oil over medium heat. Add the rinsed and drained chickpeas to the skillet. Season them with smoked paprika, garlic powder, onion powder, cayenne pepper, plus salt and pepper to taste.

    Sauté: Cook the chickpeas for approximately 5-7 minutes, stirring occasionally, until they become slightly crispy and heated through.

      Add BBQ Sauce: Stir in the BBQ sauce, ensuring each chickpea is well coated. Allow the mixture to cook for an additional 3-5 minutes until heated through and the sauce has slightly thickened. Remove from heat.

        Make the Coleslaw: In a large mixing bowl, combine the shredded green cabbage and carrots. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), and a pinch of salt and pepper.
