1 cup black beans, rinsed and drained

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

½ cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon olive oil

8-10 large romaine lettuce leaves (or butter lettuce)

Optional toppings: diced avocado, salsa, shredded cheese, sour cream

Prepare the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and diced red bell pepper. Sauté for about 3-4 minutes, stirring occasionally, until the vegetables are softened and aromatic.
