12 oz spaghetti

1 whole head of garlic

½ cup unsalted butter (equivalent to 1 stick)

2 tablespoons extra virgin olive oil

1 teaspoon red pepper flakes (optional, adjust for spice preference)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt, plus additional for pasta water

Freshly ground black pepper, to taste

½ cup grated Parmesan cheese, plus more for serving

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice off the top of the garlic head to expose the individual cloves. Drizzle the exposed cloves with olive oil and enclose the garlic in aluminum foil. Place it in the oven and roast for about 30-35 minutes, or until the cloves are soft and golden brown. Once roasted, allow the garlic to cool for a few minutes. Squeeze the roasted cloves out of their skins and transfer them to a small bowl. Mash the cloves into a smooth paste for incorporation into the butter.

    Cook the Spaghetti: In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente, typically around 8-10 minutes. Before draining, reserve approximately 1 cup of the starchy pasta water, then drain the spaghetti.
