Ingredients

1 lb ground turkey (preferably lean)

1 cup fresh spinach, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup whole wheat breadcrumbs

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 large egg, beaten

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil (for cooking)

Burger buns (choose whole wheat or regular)

Optional Toppings: fresh lettuce, tomato slices, cucumber slices, tzatziki sauce or yogurt

Instructions

Prepare the Mixture: In a large mixing bowl, combine the ground turkey, finely chopped spinach, crumbled feta cheese, whole wheat breadcrumbs, diced red onion, minced garlic, beaten egg, dried oregano, salt, and black pepper. Using your hands or a spatula, mix gently but thoroughly until all ingredients are evenly blended.

Form the Patties: Divide the mixture into four equal portions (approximately 4 oz each) and gently shape them into patties, ensuring each is about ¾ inch thick. Press a small indentation in the center of each patty to promote even cooking.

Cook the Patties: Heat the olive oil in a non-stick skillet or grill pan over medium heat. Once the oil is shimmering, carefully place the patties in the pan. Cook the patties for approximately 5-6 minutes on one side or until golden brown, then flip and continue cooking for another 5-6 minutes on the other side. Ensure the internal temperature reaches 165°F (74°C) for safe consumption.

Toast the Buns: During the final minutes of cooking the burgers, toast the burger buns. You can do this either on the grill or in a separate pan until they reach a golden brown color.

Assemble the Burgers: Once the turkey patties are cooked, place each patty on the bottom half of a toasted bun. Layer on fresh lettuce, a slice of tomato, slices of cucumber, and a generous dollop of tzatziki sauce or yogurt. Cap with the top half of the bun.

Serve: Enjoy your delightful Spinach & Feta Turkey Burgers right away, accompanied by your favorite side dish, such as crispy sweet potato fries or a fresh, vibrant salad!
