2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

1 bell pepper (your choice of color), sliced

1 cup snap peas, trimmed

2 cups broccoli florets

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup honey

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for a spicy kick)

Sesame seeds (for garnish)

Fresh scallions, chopped (for garnish)

Cooked rice or quinoa, for serving

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture; this should take at least 30 minutes. Once pressed, cut the tofu into bite-sized cubes. In a mixing bowl, thoroughly toss the tofu cubes with cornstarch until evenly coated. This step ensures a crispy texture when cooked.

    Cook the Tofu: In a large non-stick skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the tofu cubes in a single layer, ensuring they are not overcrowded.
