8 oz (225 g) pasta of your choice (linguine, penne, or fusilli work well)

1 cup sun-dried tomatoes, packed in oil, drained and chopped

2 cups fresh spinach, washed and roughly chopped

3 cloves garlic, minced

¼ cup extra virgin olive oil

½ teaspoon red pepper flakes (adjust to taste)

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ cup grated Parmesan cheese, plus more for serving

1 tablespoon freshly squeezed lemon juice

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, fill it with water and add a generous amount of salt. Bring the water to a rolling boil. Add your selected pasta and cook according to package instructions until al dente (firm to the bite). Before draining, reserve 1 cup of the starchy pasta water for later use, then drain the pasta and set it aside.

    Prepare the Sauce: In a large skillet, pour in the extra virgin olive oil and heat it over medium heat. Once hot, add the minced garlic. Sauté the garlic for about 1 minute until it releases a fragrant aroma, being careful not to let it brown.

      Add Sun-Dried Tomatoes and Spinach: Introduce the chopped sun-dried tomatoes to the skillet, stirring them into the garlic-infused oil. Let them sauté together for an additional 2-3 minutes. Next, add the fresh spinach along with the red pepper flakes, salt, and black pepper. Stir continuously for about 2 minutes until the spinach has wilted and combined well with the other ingredients.

        Combine Pasta and Sauce: Add the cooked pasta directly into the skillet with the sun-dried tomato and spinach mixture. Using tongs or a pasta fork, toss everything together thoroughly until the pasta is fully coated. Gradually add the reserved pasta water, a little at a time, mixing until the sauce reaches your desired consistency.

          Finish with Cheese and Lemon: Remove the skillet from the heat. Stir in the grated Parmesan cheese and lemon juice, mixing well until the cheese has melted and all the ingredients are evenly combined.

            Serve: Plate the pasta generously and garnish with fresh basil leaves and additional grated Parmesan cheese as desired. For an added touch of flavor, drizzle a bit of extra olive oil over the top before serving.
