Ingredients

For the Base:

1 ½ cups rolled oats

1 cup whole wheat flour

⅓ cup packed brown sugar

½ teaspoon baking soda

½ teaspoon ground cinnamon

½ cup melted coconut oil or softened unsalted butter

¼ cup honey or maple syrup

1 teaspoon vanilla extract

Pinch of salt

For the Apple Filling:

2 medium apples (recommended: Honeycrisp or Fuji), peeled, cored, and diced

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 teaspoon lemon juice

For the Topping:

½ cup rolled oats

⅓ cup almond flour (or any flour of your choice)

¼ cup brown sugar

1 teaspoon ground cinnamon

2 tablespoons melted coconut oil or softened unsalted butter

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, ensuring some paper hangs over the edges to facilitate easy removal later.

Prepare the Base Mixture: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking soda, cinnamon, and salt. Add in the melted coconut oil (or softened butter), honey (or maple syrup), and vanilla extract. Mix thoroughly until the ingredients come together to form a crumbly dough-like mixture.

Press the Base into the Pan: Take about two-thirds of the oat mixture and transfer it into your prepared baking pan. Press down firmly and evenly to create a solid base layer. Bake in the preheated oven for 10-12 minutes, or until it turns a light golden brown.

Prepare the Apple Filling: In a separate bowl, combine the diced apples with the brown sugar, cinnamon, and lemon juice. Toss gently until the apples are well coated. Allow this mixture to sit for a few minutes to release some of its natural juices.

Layer the Filling: After the base has baked, remove it from the oven. Evenly distribute the apple filling over the warm crust, ensuring an even layer for optimal flavor in every bite.

Make the Crumble Topping: In a small bowl, mix together the rolled oats, almond flour, brown sugar, and cinnamon for the topping. Drizzle the melted coconut oil (or butter) over this mixture. Stir until it reaches a crumbly consistency.

Add the Topping: Evenly sprinkle the crumble topping over the apple filling, ensuring all areas are covered for a delightful crunch in each bar.

Bake the Bars: Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is a rich golden brown and you can see the apples bubbling beneath.

Cool and Slice: Once baked, take the pan out of the oven and allow it to cool for at least 15 minutes. Use the parchment paper overhang to carefully lift the bars out of the pan. Place them on a cutting board and slice into 12 equal bars.

Serve and Store: Enjoy these bars warm or at room temperature. Leftovers can be stored in an airtight container at room temperature for up to 4 days or in the refrigerator for up to a week.
