Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1/2 cup granulated sugar

1/4 cup light brown sugar, packed

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup low-fat cottage cheese

2 large eggs

1/4 cup unsalted butter, melted

1 teaspoon pure vanilla extract

1 cup fresh blueberries (or use frozen if out of season)

Zest of 1 lemon

1 tablespoon fresh lemon juice

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a 12-cup muffin tin by lining it with paper liners or lightly greasing it with non-stick spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Use a whisk to blend them thoroughly, ensuring an even distribution of ingredients.

Prepare Wet Ingredients: In a separate bowl, whisk together the cottage cheese, eggs, melted butter, vanilla extract, lemon zest, and lemon juice. Mix until the mixture is smooth and creamy, with no lumps.

Combine Wet and Dry Ingredients: Carefully fold the wet mixture into the dry ingredients using a rubber spatula or wooden spoon. Mix until just combined; it’s important to avoid overmixing—some lumps are perfectly fine!

Add Blueberries: Gently fold the fresh blueberries into the batter, taking care to distribute them evenly throughout the mixture without crushing them.

Fill Muffin Tins: Spoon the batter into the prepared muffin cups, filling each about 3/4 full. For an extra touch of sweetness and a nice crunch on top, consider sprinkling a little granulated sugar over the batter before baking.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes. The muffins are done when they are golden brown and a toothpick inserted into the center comes out clean.

Cool: After baking, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, gently transfer them to a wire rack to cool completely.

Serve: Just before serving, you can dust the muffins with powdered sugar for an elegant finish. Enjoy these delightful, fluffy muffins warm, or at room temperature for a delicious snack at any time!
