2 ripe mangoes, peeled and diced into small chunks

2 cups plain Greek yogurt (substitute with dairy-free yogurt for a vegan alternative)

1/2 cup coconut milk (either canned or from a carton)

1/4 cup honey or maple syrup (adjust to taste based on your preferred level of sweetness)

1 tablespoon fresh lime juice

A pinch of salt

Optional: 1/4 cup shredded coconut or finely chopped fresh mint for garnish

Instructions
 

Blend the Mangoes: In a high-powered blender, combine the diced mangoes. Blend until you achieve a smooth puree. If you enjoy some texture, pulse the blender a few times to leave small chunks of mango.

    Mix the Yogurt Base: In a medium mixing bowl, whisk together the Greek yogurt, coconut milk, honey (or maple syrup), fresh lime juice, and a pinch of salt. Mix until the ingredients are well combined and the mixture is creamy.

      Combine Mixtures: Gently fold the mango puree into the yogurt mixture using a spatula. Stir carefully to create beautiful swirls, ensuring the two mixtures do not fully combine for a visually appealing effect.

        Fill the Molds: Pour the combined mango-yogurt mixture into popsicle molds, taking care to leave a small gap at the top of each mold to allow for expansion as the popsicles freeze.

          Insert Sticks: If your popsicle molds have built-in stick holders, insert the sticks into the center of each mold right away. If not, wait for the mixtures to partially freeze for about 1-2 hours, then insert the sticks.

            Freeze: Place the filled molds in the freezer and allow them to freeze for at least 4-6 hours, or until they are completely solid.

              Unmold and Serve: To release the popsicles, briefly run the molds under warm water for a few seconds or gently tug on the sticks. If desired, sprinkle the tops with shredded coconut or garnish with fresh mint for an extra touch of flavor.
