Ingredients

1 cup raw pistachios (shelled)

1 cup medjool dates (pitted)

1/2 cup rolled oats

1/4 cup unsweetened shredded coconut

2 tablespoons rose water

1 tablespoon honey or maple syrup (for a vegan option)

1/4 teaspoon salt

1/4 teaspoon ground cardamom

1/4 cup finely chopped dried rose petals (optional, for garnish)

Extra shredded coconut or finely chopped pistachios (for coating)

Instructions

Prepare the Ingredients: If using raw pistachios, consider toasting them for enhanced flavor. Heat a dry skillet over medium heat and toast the pistachios for about 4-5 minutes, stirring occasionally, until they are fragrant. Allow them to cool before proceeding with the next steps.

Blend the Base: In a food processor, add the cooled pistachios, medjool dates, rolled oats, shredded coconut, rose water, honey (or maple syrup), salt, and ground cardamom. Pulse the mixture several times until it forms a sticky dough, making sure to scrape down the sides as necessary to incorporate all ingredients.

Check Consistency: After blending, test the mixture by pressing a small amount between your fingers. It should hold together without crumbling. If the mixture feels dry, add a teaspoon more of rose water or honey. If it’s too sticky, mix in a little extra rolled oats until the desired consistency is reached.

Shape the Bites: Using your hands, scoop out a tablespoon-sized portion of the mixture and roll it into a ball about 1 inch in diameter. Continue this process with the remaining mixture until all bites are formed.

Coat the Bites: For added texture and flavor, roll each energy bite in either extra shredded coconut or finely chopped pistachios, ensuring each bite is well-coated.

Garnish (Optional): For a garnish, gently press the finely chopped dried rose petals onto the tops of the energy bites to create a beautiful and fragrant presentation.

Store and Enjoy: Transfer the energy bites to an airtight container. They can be enjoyed right away or stored in the fridge for up to one week. For longer shelf life, place them in the freezer where they’ll keep for up to 3 months.

Prep Time, Total Time, Servings: 15 minutes | 15 minutes | Makes about 15 energy bites

Presentation Tips: Arrange the energy bites on a decorative plate and sprinkle some extra shredded coconut around them for an appealing look. Consider placing a few edible rose petals on the plate to enhance the presentation further.
