2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 pound ground turkey

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

Salt and black pepper, to taste

2 cups fresh spinach (or frozen, thawed)

2 tablespoons extra virgin olive oil

1/4 cup low-sodium chicken broth

1/4 cup shredded cheese (cheddar or pepper jack, optional)

Fresh cilantro or parsley, for garnishing (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Once hot, add the diced sweet potatoes and season with a pinch of salt and black pepper. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and begin to caramelize, developing a golden-brown color.

    Sauté the Aromatics: Once the sweet potatoes are done, push them to one side of the skillet. In the other side, add the remaining tablespoon of olive oil along with the chopped onion. Sauté for about 2-3 minutes until the onion becomes translucent, then add the minced garlic and diced red bell pepper. Cook for an additional 2 minutes until the bell pepper softens slightly.

      Cook the Ground Turkey: Add the ground turkey to the skillet, using a spatula to break it apart as it cooks. Stir frequently, cooking until the turkey is browned and completely cooked through, about 5-7 minutes.

        Season the Mixture: Once the turkey is fully cooked, combine it with the sweet potatoes, onions, and bell pepper. Sprinkle in the smoked paprika, cumin, chili powder, cayenne pepper (if using), and adjust with additional salt and pepper to taste. Mix thoroughly to coat all ingredients evenly with the spices.
