1 block (14 oz) firm tofu, pressed and drained

1 cup cooked brown rice, cooled

4 large rice paper wraps

1 cup mixed vegetables (such as julienned carrot, bell pepper, and cucumber)

¼ cup green onions, finely sliced

¼ cup fresh cilantro, roughly chopped

¼ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Sesame seeds for garnish

Prep the Tofu: Begin by slicing the pressed tofu into thin, even strips to ensure uniform cooking. In a medium bowl, combine teriyaki sauce, soy sauce, rice vinegar, garlic powder, sesame oil, a pinch of salt, and black pepper. Add the tofu strips to the marinade, tossing gently to coat all sides. Allow the tofu to marinate for at least 15 minutes, flipping occasionally for even flavor absorption.

    Cook the Tofu: Preheat a non-stick skillet over medium heat. Once the skillet is hot, carefully add the marinated tofu strips. Cook for about 5-7 minutes on each side, or until the tofu turns a lovely golden brown and develops a slight crispness. Once done, remove from heat and set aside to cool slightly.

      Prepare the Rice Paper: To soften the rice paper wraps, fill a shallow dish with warm water. Immerse one rice paper wrap into the water for approximately 15 seconds, or until it becomes pliable but not overly soggy. Carefully remove and lay it flat on a clean, dry surface.

        Assemble the Wraps: In the center of the softened rice paper, create a small mound with a spoonful of cooked brown rice. Top the rice with several strips of the seared tofu, a handful of mixed vegetables, followed by a sprinkle of green onions and fresh cilantro. Take care not to overfill to ensure easy wrapping.

          Roll the Wrap: Starting from the bottom of the rice paper, fold the sides inwards towards the center, ensuring the filling is tucked in neatly. Then, roll the wrap upward towards the top, sealing the contents tightly. Repeat this process with the remaining rice paper wraps and filling until all ingredients are used.
