Ingredients

1 block (14 oz) firm tofu, pressed and sliced into thin strips

1 cup uncooked jasmine rice

2 cups water (for cooking rice)

½ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 cup shredded carrots

1 cup cucumber, julienned

1 red bell pepper, thinly sliced

¼ cup green onions, finely chopped

4 large nori sheets (seaweed)

1 tablespoon sesame seeds (for garnish)

Lettuce leaves (for an added crunch)

Optional: Sriracha or chili sauce for those who crave extra heat

Instructions

Prepare the Rice: Begin by rinsing the jasmine rice thoroughly under cold running water until the water is clear. In a medium saucepan, combine the rinsed rice with 2 cups of water and bring to a rolling boil. Once boiling, reduce the heat to low, cover, and allow it to simmer gently for 15 minutes. Afterward, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.

Marinate the Tofu: Place the sliced tofu in a bowl and pour in the teriyaki sauce, ensuring each piece is well-coated. Allow the tofu to marinate for a minimum of 15 minutes; for deeper flavor, let it marinate in the refrigerator overnight.

Cook the Tofu: Heat sesame oil in a non-stick skillet over medium-high heat. Carefully remove the tofu from the marinade (keep the marinade for later) and gently add it to the skillet. Cook the tofu for approximately 3-4 minutes on each side, or until it achieves a delightful golden brown color. After browning, pour in the reserved teriyaki marinade, allowing it to simmer and thicken for an additional 2-3 minutes, ensuring the tofu is evenly coated. Remove from heat.

Assemble the Wraps: On a clean, flat surface, lay down a nori sheet with the shiny side facing down. In the center of the nori, place a generous scoop of the cooked jasmine rice, leaving space on the edges. Layer on several strips of the teriyaki tofu, followed by a handful of shredded carrots, julienned cucumber, thinly sliced bell pepper, and a sprinkle of chopped green onions.

Wrap the Nori: Begin by folding the bottom edge of the nori over the filling, then fold the sides inward toward the center. Carefully roll the wrap tightly from the bottom to the top, sealing the edge with a small amount of water to ensure it stays closed.

Garnish and Serve: Cut the wraps in half diagonally and sprinkle with sesame seeds for an added touch. Serve with extra teriyaki sauce or a side of Sriracha for those who enjoy some spice. Revel in the explosion of fresh flavors with every delicious bite!

              Prep Time: 20 minutes | Total Time: 45 minutes | Servings: 4

                - Presentation Tips: Serve the wraps on a vibrant platter, and garnish with extra lettuce leaves and a small bowl of dipping sauce on the side for added flair. Enjoy your delightful and healthy meal!
