Ingredients

For the Tofu Skewers:

14 oz firm tofu, pressed and thoroughly drained

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons maple syrup

1 teaspoon garlic powder

1 teaspoon ground ginger

1 tablespoon rice vinegar

Salt and pepper, to taste

Bamboo or metal skewers (if using bamboo, soak them in water for 30 minutes prior to use)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

½ red onion, finely chopped

1 medium jalapeño, seeded and finely minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Instructions

Prepare the Tofu Marinade:

    - In a medium-sized mixing bowl, combine the soy sauce, sesame oil, maple syrup, garlic powder, ground ginger, rice vinegar, and a pinch of salt and pepper. Whisk until well combined to create a flavorful marinade.

      Marinate the Tofu:

        - Cut the pressed tofu into 1-inch cubes and gently place them into the marinade. Toss the tofu cubes carefully to ensure they are evenly coated. Allow the tofu to marinate for at least 30 minutes at room temperature (you may refrigerate it for longer for deeper flavor absorption).

          Make the Strawberry Salsa:

            - In a separate medium bowl, mix together the diced strawberries, finely chopped red onion, minced jalapeño, and chopped cilantro. Squeeze the lime juice over the mixture and season with salt and pepper. Gently stir to combine, then set aside to let the flavors develop.

              Assemble the Skewers:

                - Preheat your grill or grill pan over medium-high heat. While it's heating, carefully thread the marinated tofu cubes onto the skewers, ensuring they are spaced out evenly for optimal grilling.

                  Grill the Skewers:

                    - Once the grill is ready, place the skewers on it. Grill for approximately 10-12 minutes, turning them occasionally to achieve a nice golden brown color with slight charring.

                      Serve:

                        - After grilling, remove the skewers from the heat and allow them to cool slightly. Serve the warm grilled tofu skewers topped generously with the refreshing strawberry salsa for a delightful contrast of flavors.
