1/2 cup brown sugar, packed

2 large eggs

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup Greek yogurt (or applesauce for a dairy-free alternate)

1/2 cup chopped pecans or walnuts (optional)

1/2 cup raisins or dried cranberries (optional)

Cinnamon Swirl Mixture:

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 tablespoons melted butter or coconut oil

Cream Cheese Glaze:

4 oz cream cheese, softened to room temperature

1/4 cup powdered sugar

1 tablespoon milk

1/2 teaspoon vanilla extract

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lightly greasing it or lining it with parchment paper for easy removal later.

    Prepare the Oat Mixture: In a large mixing bowl, thoroughly combine the rolled oats, almond milk, packed brown sugar, eggs, vanilla extract, ground cinnamon, nutmeg (if you're using it), baking powder, salt, and Greek yogurt. Mix until evenly incorporated, then let the mixture sit for about 10 minutes. This allows the oats to absorb some of the moisture and soften.

      Make the Cinnamon Swirl: In a separate small bowl, mix together the 1/4 cup brown sugar, 1 tablespoon ground cinnamon, and the melted butter (or coconut oil) until a thick, paste-like consistency is achieved.

        Layer the Oatmeal Mixture: Pour half of the prepared oatmeal mixture into the bottom of the greased baking dish. Drizzle half of the cinnamon swirl mixture over this layer. Using a knife or a skewer, gently swirl the mixture into the oatmeal to create a marbled effect.
