For Watermelon Layer:

4 cups fresh watermelon, cubed and blended until smooth

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 tablespoon freshly squeezed lime juice

For Kiwi Layer:

4 ripe kiwis, peeled and roughly chopped

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 tablespoon freshly squeezed lemon juice

1/2 cup coconut water (or substitute with regular water)

For Garnish (optional):

Fresh mint leaves for a refreshing touch

Small pieces of watermelon or kiwi for added decoration

Instructions
 

Prepare the Watermelon Layer:

    - In a blender, combine the cubed watermelon, honey (or agave syrup), and lime juice.

      - Blend the mixture until completely smooth and well combined. After blending, taste the mixture and adjust the sweetness with additional honey or agave if desired.

        - Carefully pour the watermelon mixture into popsicle molds, filling each mold about 1/3 full.

          - Place the filled molds in the freezer and allow them to set for approximately 1 to 2 hours, or until firm to the touch.

            Prepare the Kiwi Layer:

              - After the watermelon layer has sufficiently set, clean the blender to eliminate any residual flavors and add the chopped kiwis, honey (or agave syrup), lemon juice, and coconut water.

                - Blend until the mixture is completely smooth and free of lumps.

                  - Once the watermelon layer is firm, cautiously remove the molds from the freezer. Gently pour the kiwi mixture on top of the watermelon layer to fill each mold to the top.

                    Final Freezing:

                      - Insert popsicle sticks into each mold, ensuring they are centered. Return the molds to the freezer for an additional 3 to 4 hours, or until the layered popsicles are completely frozen.

                        Unmolding the Pops:

                          - To release the popsicles from the molds, run warm water over the outside of each mold for a few seconds. This will help to loosen the pops.

                            - Gently pull on the sticks to remove the popsicles from the molds.

                              Serve:

                                - For an appealing presentation, serve the popsicles garnished with fresh mint leaves and small pieces of watermelon or kiwi on a decorative plate. Enjoy these refreshing, vibrant treats as a delightful snack or dessert!
