Ingredients

1 medium head of cauliflower, cut into small florets

1/2 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1/2 cup cold water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 cup buffalo sauce (adjust based on your spice preference)

4 large tortillas (whole wheat or gluten-free)

1 cup shredded lettuce

1 medium tomato, diced

1/2 ripe avocado, sliced thin

1/4 cup blue cheese crumbles (optional)

Fresh cilantro, for garnish

Olive oil spray for roasting

Instructions

Prep the Cauliflower: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup. In a mixing bowl, combine the flour, cold water, garlic powder, onion powder, smoked paprika, and salt. Whisk these ingredients together until you have a smooth batter. Add the cauliflower florets to the bowl and toss them gently until they are evenly coated in the mixture.

Roast the Cauliflower: Spread the battered cauliflower evenly across the prepared baking sheet, making sure to leave some space between each piece for even roasting. Lightly spritz the cauliflower with olive oil spray to enhance crispiness. Roast in the preheated oven for 25-30 minutes, stirring halfway through the cooking time, until the cauliflower is golden brown and has a crispy texture.

Toss with Buffalo Sauce: Once the cauliflower is finished roasting, carefully remove it from the oven. Transfer the roasted cauliflower to a large bowl and pour the buffalo sauce over it. Gently fold the cauliflower in the sauce, ensuring that each floret is thoroughly coated in that zesty, spicy goodness.

Assemble the Wraps: On a clean, flat surface, lay out each tortilla. In the center of each tortilla, place a generous handful of shredded lettuce, followed by a few spoonfuls of the buffalo cauliflower, then add diced tomatoes, slices of avocado, and a sprinkle of blue cheese crumbles if desired.

Wrap It Up: To fold the wraps, start by bringing the sides of the tortilla inward, then roll the tortilla tightly from the bottom up to enclose the filling securely. For an added crunch, you can toast the wrapped tortillas in a skillet over medium heat for a few minutes on each side until golden.

Garnish and Serve: After toasting, slice the wraps in half diagonally and arrange them on a serving platter. Garnish with fresh cilantro on top for a pop of color and flavor. Serve with extra buffalo sauce on the side for those who like it extra spicy!
