Ingredients

2 large cucumbers, diced into bite-sized pieces

4 ripe tomatoes, chopped into cubes

1 small red onion, thinly sliced into half-moons

1 red bell pepper, diced into small bits

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled into chunks

1/4 cup fresh parsley, finely chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Salt and freshly cracked pepper, to taste

Instructions

Prep the Vegetables: Begin by thoroughly washing the cucumbers and tomatoes. Dice the cucumbers into bite-sized pieces, chop the tomatoes into medium cubes, thinly slice the red onion into half-moons, and dice the red bell pepper into small bits. Place all the prepared vegetables into a spacious mixing bowl.

Incorporate Olives and Feta: Carefully add the Kalamata olives and crumbled feta cheese to the bowl filled with vegetables. Gently mix everything together using a spatula or your hands, taking care not to crush the feta.

Prepare the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, fresh lemon juice, dried oregano, and a pinch of salt and pepper. Taste and adjust the seasoning to your preference.

Combine Salad and Dressing: Drizzle the dressing over the vegetable mixture in the large bowl. With a gentle hand, toss all ingredients together to ensure they are evenly coated in the dressing.

Add Garnish: Sprinkle the finely chopped fresh parsley over the salad for added color and flavor. Use a light touch to give the salad a final toss, integrating the parsley without over-mixing.

Chill for Flavor Fusion: Cover the bowl with plastic wrap or a lid and place the salad in the refrigerator for at least 30 minutes before serving. This resting time allows the flavors to meld beautifully, enhancing the overall taste.

Serve: If there is excess liquid in the salad, gently strain it before serving. Present this refreshing and zesty salad as a vibrant side dish or enjoy it as a light meal on its own!
