2 cups cooked chicken, shredded (rotisserie chicken adds extra flavor)

1 cup fresh pineapple, diced into small pieces

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup shredded Monterey Jack cheese

1/2 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Juice of 1 lime (about 2 tablespoons)

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil (divided)

Optional: Sour cream and salsa for serving

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, diced pineapple, red bell pepper, finely chopped red onion, shredded Monterey Jack cheese, and chopped cilantro. Sprinkle in the ground cumin, smoked paprika, chili powder, lime juice, and season generously with salt and pepper. Mix all the ingredients thoroughly until evenly combined.

    Heat the Tortillas: In a large skillet over medium heat, add 1 tablespoon of olive oil and allow it to warm for about 30 seconds. Carefully place one flour tortilla in the skillet, warming it for approximately 1-2 minutes, or just until it begins to soften and becomes pliable.

      Add Filling: Spoon about 1 cup of the chicken and pineapple filling onto one half of the warmed tortilla. Fold the tortilla over to create a half-moon shape, ensuring the filling is contained within.

        Cook the Quesadilla: Cook the quesadilla for 3-4 minutes on one side, or until it is golden brown and crispy. Gently flip the quesadilla and cook for another 3-4 minutes on the other side, until both sides are beautifully toasted. Once done, remove it from the skillet and keep warm on a plate. Repeat this process with the remaining tortillas and filling, adding the second tablespoon of olive oil as needed for cooking.
