Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Zest and juice of 1 lime

Salt and freshly cracked black pepper, to taste

For the Avocado Cream Sauce:

1 ripe avocado

1/2 cup plain Greek yogurt

1 tablespoon fresh lime juice

1 clove garlic, minced

Salt and freshly cracked black pepper, to taste

Fresh cilantro, chopped (for garnish, optional)

For the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

1 cup diced ripe tomatoes

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions

Marinate the Shrimp: In a medium mixing bowl, whisk together the olive oil, chili powder, smoked paprika, garlic powder, ground cumin, lime zest, lime juice, salt, and black pepper. Add the peeled and deveined shrimp, tossing them until they are evenly coated in the marinade. Cover the bowl and let the shrimp marinate for at least 15 minutes while you prepare the other ingredients.

Prepare the Avocado Cream Sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, minced garlic, salt, and black pepper. Blend the mixture until you achieve a smooth and creamy texture. Taste and adjust the seasoning as needed. If the sauce is too thick for your liking, feel free to stir in a little water or additional lime juice until you reach your desired consistency.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once the skillet is hot, carefully add the marinated shrimp in a single layer. Cook the shrimp for approximately 2-3 minutes on each side, or until they turn pink and opaque. Remove the skillet from the heat once cooked.

Warm the Tortillas: In the same skillet, or in a separate dry skillet, warm the tortillas for about 30 seconds on each side until they are soft and pliable. Alternatively, you can wrap the tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 5 minutes to warm them.

Assemble the Tacos: On each warmed tortilla, place a generous spoonful of the shredded red cabbage as a base. Layer on a few cooked shrimp, top with a dollop of the avocado cream sauce, followed by diced tomatoes, and sprinkle with chopped fresh cilantro.

Serve: Serve the tacos immediately with lime wedges on the side, allowing everyone to squeeze fresh lime juice over their tacos to enhance the flavors. Prepare to savor the vibrant explosion of tastes with every delightful bite!
