Ingredients

1 lb (450g) large shrimp, peeled and deveined

3 tablespoons extra virgin olive oil

Zest and juice of 2 fresh limes

3 cloves garlic, finely minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust based on spice preference)

1/4 cup fresh cilantro, finely chopped

Sea salt and freshly ground black pepper to taste

Lime wedges for serving

Cooked rice, quinoa, or warm tortillas (optional, for serving)

Instructions

Marinate the Shrimp: In a medium-sized mixing bowl, whisk together the olive oil, lime zest, lime juice, minced garlic, ground cumin, smoked paprika, red pepper flakes, salt, and pepper until well mixed. Add the shrimp to the marinade and gently toss to ensure each piece is well coated. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 20 minutes, allowing the flavors to meld. For enhanced flavor, you can marinate the shrimp for up to 1 hour.

Cook the Shrimp: Heat a large, non-stick skillet over medium-high heat until it is hot but not smoking. Remove the shrimp from the marinade, allowing excess marinade to drip off (discard any remaining marinade). Place the shrimp in the skillet in a single layer. Cook for 2-3 minutes on each side or until the shrimp are fully cooked, turning pink and opaque.

Add Fresh Cilantro: Once the shrimp are cooked through, remove the skillet from heat. Sprinkle the finely chopped cilantro over the shrimp and gently stir to evenly distribute the herbs throughout the shrimp.

Serve: Plate the Zingy Cilantro Lime Shrimp immediately, accompanied by lime wedges for squeezing over the top. This vibrant dish pairs beautifully with a bed of fluffy cooked rice, hearty quinoa, or tucked into warm tortillas for delicious shrimp tacos. For an added flourish, feel free to garnish with extra cilantro.
