Ingredients

2 medium flour tortillas

1 cup shredded mozzarella cheese

1 cup cooked shredded chicken

1 cup fresh pineapple, diced

½ cup red bell pepper, diced

¼ cup red onion, finely chopped

1 jalapeño, deseeded and minced (adjust according to spice preference)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Olive oil, for cooking

Sour cream or Greek yogurt, for serving

Instructions

Prepare the Pineapple Salsa: In a medium mixing bowl, combine the diced pineapple, red bell pepper, finely chopped red onion, minced jalapeño, and chopped cilantro. Squeeze the lime juice over the mixture, then season with salt and pepper according to your taste. Toss all the ingredients gently until they’re well mixed. Set this vibrant salsa aside to let the flavors meld.

Assemble the Quesadillas: Place one flour tortilla flat on a clean cutting board or plate. Evenly sprinkle half of the shredded mozzarella cheese over one half of the tortilla. On top of the cheese, layer half of the cooked shredded chicken, followed by half of your pineapple salsa mixture. Add another sprinkle of mozzarella cheese on top, then carefully fold the tortilla over, covering all the fillings.

Cook the Quesadillas: Heat a large non-stick skillet over medium heat and add a drizzle of olive oil to coat the bottom. Once the oil shimmers, gently place the folded quesadilla into the skillet. Cook for 3-4 minutes on one side until golden brown and crispy. Use a spatula to flip the quesadilla and cook for an additional 3-4 minutes on the other side until it reaches a similar crispy texture.

Slice and Serve: After cooking, remove the quesadilla from the skillet and let it rest for a minute to cool slightly. Using a sharp knife or pizza cutter, slice the quesadilla into wedges. Serve these delicious wedges with a side of sour cream or Greek yogurt for dipping. Repeat the assembly and cooking steps for the second quesadilla.

Garnish & Enjoy: For an extra touch, consider topping your quesadillas with additional pineapple salsa and a sprinkle of fresh cilantro before serving, adding a burst of color and flavor.
