4 medium zucchinis

2 cups cooked chicken breast, shredded

1 cup romaine lettuce, chopped

½ cup Caesar dressing (store-bought or homemade)

½ cup grated Parmesan cheese, divided

¼ cup croutons, crushed

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped for garnish (optional)

Prepare the Zucchinis: Preheat your oven to 400°F (200°C). Carefully cut each zucchini in half lengthwise and use a small spoon or melon baller to scoop out the center, leaving about 1/4 inch of flesh along the sides to form a boat. Arrange the zucchini halves on a baking sheet with the cut side facing up. Drizzle with olive oil and season with salt and pepper, ensuring the surfaces are well-coated.

    Bake the Zucchini Boats: Place the baking sheet in the preheated oven and bake the zucchinis for 15 minutes. This will soften them slightly, making them perfect for stuffing.

      Mix the Filling: While the zucchinis are baking, grab a large mixing bowl. Combine the shredded chicken, chopped romaine lettuce, Caesar dressing, and half of the grated Parmesan cheese. Mix thoroughly until all ingredients are evenly coated with the dressing.

        Stuff the Zucchini: Once the zucchinis are done baking, remove them from the oven and let them cool for a couple of minutes. Spoon the chicken mixture into each zucchini boat, pressing it down gently to create a packed filling.

          Top & Bake Again: Evenly sprinkle the remaining Parmesan cheese and the crushed croutons over the stuffed zucchinis. Return them to the oven and bake for an additional 10-12 minutes or until the zucchini is tender and the toppings are golden and crispy.
