Prep the Zucchini: Begin by grating the zucchinis using a box grater or food processor. Transfer the grated zucchini to a clean kitchen towel or several layers of paper towels, and thoroughly squeeze out any excess moisture.     Mix the Batter: In a large mixing bowl, combine the drained grated zucchini, sweet corn, all-purpose flour, cornmeal, and grated Parmesan cheese if desired.
