Ingredients

1 medium zucchini, thinly sliced

1 cup fresh corn kernels (or frozen corn, thawed)

1 pre-made pizza dough (store-bought or homemade)

1 cup mozzarella cheese, shredded

1/2 cup crumbled feta cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for spice)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions

Preheat Your Oven: Start by preheating your oven to 475°F (245°C). If you're using a pizza stone, place it in the oven to heat up while you prepare the pizza.

Sauté the Zucchini and Corn: In a large skillet over medium heat, pour in 1 tablespoon of olive oil. Once the oil is shimmering, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced zucchini and corn, seasoning them with oregano, red pepper flakes (if using), salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender and slightly caramelized. Once cooked, remove the skillet from heat and set the mixture aside.

Roll Out the Dough: On a clean, lightly floured surface, roll out the pizza dough into your desired shape, either round or rectangular. Carefully transfer the rolled-out dough to a pizza peel or a baking sheet lined with parchment paper.

Assemble the Pizza: Using a brush, apply the remaining tablespoon of olive oil over the surface of the dough to create a golden crust. Next, evenly distribute the sautéed zucchini and corn mixture across the pizza base. Sprinkle the shredded mozzarella cheese on top, followed by the crumbled feta cheese for a delicious tangy finish.

Bake the Pizza: If you have a pizza stone, gently slide the assembled pizza onto the stone. If using a baking sheet, simply place it in the oven. Bake for approximately 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.

Garnish and Serve: Once your pizza is baked to perfection, remove it from the oven and let it cool for a few minutes. Before slicing, garnish with fresh basil leaves for a pop of color and flavor. Serve hot and enjoy each slice of this delightful zucchini and corn pizza!
