Ingredients

2 medium zucchinis, grated and excess moisture squeezed out

1 cup rolled oats

1 cup almond flour

1/2 cup honey or maple syrup (your choice for sweetness)

1/3 cup coconut oil, melted

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional for added crunch)

1/2 cup dark chocolate chips or dried fruits (optional for sweetness)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lining it with parchment paper, ensuring there's an overhang on the sides for easy removal later.

Prepare the Zucchini: Use a box grater to grate the zucchinis finely. Once grated, transfer them to a clean kitchen towel or several layers of paper towels. Twist the towel to squeeze out as much excess moisture as possible. This step is crucial to prevent the bars from becoming soggy.

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, ground cinnamon, and salt. Stir well to ensure that all dry ingredients are evenly mixed and free from clumps.

Combine the Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until the mixture is fully combined and smooth.

Fold Ingredients Together: Gently incorporate the grated zucchini into the wet ingredients, making sure every piece is thoroughly coated. Next, pour this wet mixture into the bowl containing the dry ingredients. Stir until just combined, ensuring no dry pockets remain. If desired, fold in the chopped walnuts or pecans, along with the chocolate chips or dried fruits for added texture and flavor.

Spread and Bake: Transfer the batter to the prepared baking dish, using a spatula to spread it out evenly across the surface. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is a lovely golden brown and a toothpick inserted in the center comes out clean.

Cool and Cut: Once baked, remove the dish from the oven and let it cool for about 10 minutes. Carefully lift the bars out of the baking dish using the overhanging parchment paper. Transfer to a wire rack and allow to cool completely. Once cool, cut into squares or bars of your desired size.

Serve and Enjoy: These mouthwatering bars can be enjoyed warm or at room temperature. For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to a week, or freeze them for extended storage.
